Dr. Susan Rubin

We all lead busy lives and often stray from how we should be eating. Over time, this turns into bad habits that seem impossible to break. "People really need to heal their relationship with food," says Dr. Susan Rubin, holistic health counselor and teacher at Gilda's Club Westchester.

In her classes, Dr. Rubin introduces participants to simple, sensible ways to get the food they need, and demonstrates ways to integrate new ingredients into their cooking. Dr. Rubin's "8 Weeks to Optimum Health" workshop has become so popular that each time it is offered, members rush to learn about how she relates cooking with improving quality of life.

We are lucky to have Dr. Rubin teaching three workshops over the coming weeks:
11/8 Building Immunity
11/19 How to Avoid Holiday Weight Gain
12/17 Slow Cooking

It is particularly important to make sure you are getting the nourishment you need when facing health challenges. "Food is my biggest healing tool," says Dr. Rubin. Certain diets are especially helpful for those with cancer, but for many individuals Dr. Rubin has worked with, "their doctors can't give them any information about food."

Dr. Rubin's philosophy goes beyond just what we put into our bodies. She uses what we eat as a jumping-off point to talk about wellness in our whole lives: how we spend our time, how we interact with friends and family members and what we can do to make our lives more meaningful and enjoyable. Figuring out the things in our lives that drain us - or enrich us - is "equally as important as what's on our plates," she says. By paying attention to our body and what it needs, we can all feel a lot better.

Dr. Rubin's upcoming workshops for Spring 2011 are generously supported by Whole Foods Market White Plains. Also, through the end of the year, Gilda's Club Westchester will be the recipient of donations made through Whole Foods's "Small Change" Program which offers shoppers the opportunity to donate their bag refunds to charity – so remember Gilda's Club Westchester when you shop there!
